Nutrition & Food Science is a one semester lab course designed with a strong component in nutrition as is related to dietary functions through the family life cycle, special dietary needs, and nutrient sources. Safety, sanitation and nutrient retention in food preparation are addressed. The cultural influences on food patterns, management techniques, and career in food and nutrition occupations are also covered. Concepts and skills related to managing the dual roles of homemaker and wage earner are emphasized.

  • 1st 6-weeks: Basic Principles of Nutrition, Individual and Family Health, Safety and Sanitation, Preparation and Serving Nutritious Foods
  • 2nd 6-weeks: Dietary Guidelines, Nutritional Adequacy of Selected Diets, Influences of Food Choices, Food Choices
  • 3rd 6-weeks: Managements Principles in Meeting Nutritional Needs, Career Opportunities and Preparation Requirements,
              Employability skills, Making Career-Connections.
